Vivene's Coconut Breadfruit Bread


  • Breadfruit Flour (3 cups)

  • Cinnamon 1 tsp 

  • Nutmeg 1 tsp 

  • Salt ½ tsp

  • Baking powder 3 tsp 

  • 1 coconut (if store-bought, use about 1 cup)

  • Water 2-3 cups

  • 3 eggs

  • Sugar 1½ cups

  • Vanilla 2 tsp 


  1. Cut coconut and extract meat. Put in blender with 2-3 cups water. Mix well and set aside. 

  2. In a large mixing bowl, mix the dry ingredients (breadfruit flour, cinnamon, nutmeg, baking powder). Add wet ingredients (vanilla, eggs) to dry ingredients. 

  3. Squeeze the milk from the coconut-water mixture into the batter and blend. Add the left over coconut "trash" (the meat) once the liquid has been extracted. 

  4. Bake at 350 degrees F for about 30 minutes.

A great treat to share at a family event.
