Vegan Breadfruit Carrot Cake with Cashew Frosting



This is the perfect recipe if you're craving a sweet treat.

Cake Ingredients:

  • Grated Carrots 450g

  • Coconut Oil 170 ml 

  • Flaxseed Eggs (2 teaspoons of ground flaxseed mixed with 6 tablespoons of water) 

  • Breadfruit Flour 250g

  • Baking Powder 2 tsp

  • Baking Soda 1 tsp

  • Apple Cider Vinegar 1 tsp

  • Ground Almonds 200g

  • Agave Syrup 150g

  • Salt 1/2 tsp

  • Cinnamon 1/2 tsp

Frosting Ingredients:

  • Soaked Cashews 100g

  • Plant Based Milk 40ml

  • Coconut Oil 20ml

  • Zest of a Lime

Cake Directions:

  1. Prepare the flaxseed eggs.

  2. Combine all in a bowl with the flaxseed eggs and mix into a batter.

  3. Pour batter into a cake tin and bake at 360F (180C) for 55 min.

  4. Remove from oven and allow to cool completely. Remove the cake from the tin.

Frosting Directions:

  1. Add all ingredients to a blender and blend to a creamy texture.

  2. Cool completely in the fridge an spead on cooled cake.
