Mango Breadfruit Cookies

  • mango, pureed with a dash of lime juice, 1/2-3/4 cup 

  • melted coconut oil, cooled, 4 Tbsp 

  • vanilla 1 tsp 

  • lime juice 2 tsp 

  • sugar 1/2-3/4 cup 

  • breadfruit flour 1 1/4 cups 

  • dash of salt 

  • baking soda 1/2 tsp 

  • baking powder 1 tsp 

  • ginger powder 1/4 tsp 

  • cinnamon 1/2 tsp 


  1. Preheat oven to 350 degrees.

  2. Grease or line a cookie sheet with parchment.

  3. Mix oil, eggs and vanilla. (Use paddle attachment if you have one.)

  4. Add sugar. Continue to mix on medium speed.

  5. Whisk breadfruit flour, baking soda, baking powder, ginger, cinnamon together.

  6. Add dry mixture alternately with the pureed mango until well incorporated.

  7. Drop as cookies on parchment lined baking sheet

  8. Bake for 8-10 minutes.
