Legit Breadfruit Pancakes

Gluten-free breadfruit and cassava flour pancakes

Excellent texture and flavour!
Ingredients:
breadfruit flour 2/3 cup
cassava flour 1/3 cup
granulated sugar 2 tbsp
oil 2 tbsp
brown sugar 1 tbsp
baking powder 2 1/2 tsp
salt 1/2 tsp
heavy coconut milk 1/2 cup
water 1/2 cup
1 egg
vanilla 2 tsp
Directions:
Whisk together dry ingredients in one bowl, and wet ingredients in another.
Add wet ingredients to dry and mix until just combined and no dry flour is visible.
Pour desired amount onto a hot skillet (medium heat) and cook until hints of bubbles raise across the surface of the batter.
Flip! Should be golden brown. Cook for approximately one minute.
Remove from heat, plate, and fulljoy with your favourite toppings.
These pancakes just leap out of the picture and beg to be eaten!
