Excellent texture and flavour!


  • breadfruit flour 2/3 cup 

  • cassava flour 1/3 cup

  • granulated sugar 2 tbsp 

  • oil 2 tbsp 

  • brown sugar 1 tbsp

  • baking powder 2 1/2 tsp

  • salt 1/2 tsp 

  • heavy coconut milk 1/2 cup 

  • water 1/2 cup 

  • 1 egg 

  • vanilla 2 tsp


  1. Whisk together dry ingredients in one bowl, and wet ingredients in another.

  2. Add wet ingredients to dry and mix until just combined and no dry flour is visible.

  3. Pour desired amount onto a hot skillet (medium heat) and cook until hints of bubbles raise across the surface of the batter.

  4. Flip! Should be golden brown. Cook for approximately one minute.

  5. Remove from heat, plate, and fulljoy with your favourite toppings.

These pancakes just leap out of the picture and beg to be eaten!
