Carrot, Ginger, and Breadfruit Cake

  • Eggs - 2

  • Dark brown sugar - 100g

  • Treacle - 100g

  • Rapeseed or sunflower or any light oil - 150ml

  • Carrot, grated - 150g 

  • Nuggets of fresh ginger, grated - 4

  • Breadfruit flour - 175g

  • Baking powder - 2tsp

  • Baking Soda - 1tsp

  • Ground ginger - 2tsp


  1. Preheat the oven to 180c/350f.

  2. In a bowl, combine all ingredients into a smooth batter.

  3. Bake for 40 - 45 mins or until inserted skewer comes out fairly clean.

  4. Allow to cool completely if you intend to ice it.

*You can replace the carrots with beets or parsnips.
