We replaced wheat flour with breadfruit flour and created this recipe.


  • Margarine or butter, softened 1 1/4 Cup(s) (2-1/2 sticks) 

  • Firmly packed brown sugar 3/4 Cup(s) 

  • Granulated sugar 1/2 Cup(s) 

  • 1 Egg

  • Vanilla 1 tsp

  • Breadfruit Flour 1 1/2 Cup(s) 

  • Baking Soda 1 tsp

  • Ground cinnamon 1 tsp

  • Salt 1/2 tsp (optional) 

  • Ground nutmeg 1/4 tsp

  • Oats 3 Cup(s)  (quick or old fashioned, uncooked) 


  1. Heat oven to 375°F. In large bowl, beat margarine and sugars until creamy.

  2. Add egg and vanilla; beat well.

  3. Add combined flour, baking soda, cinnamon, salt and nutmeg; mix well.

  4. Add Breadfruit Flour; mix well.

  5. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.

  6. Bake 8 to 9 minutes for a chewy cookie or 10 to 11 minutes for a crisp cookie.

  7. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely.
