Breadfruit Lemon Puffs

This sweet, zesty treat is made with a special ingredient: breadfruit flour!

This treat was sent in by a young chef from Sourcefarm Ecovillage. It was enjoyed by their 2024 Permaculture class.
Ingredients:
breadfruit flour 1 1/2 cup
sugar 3/4 cup
coconut milk 3/4 cup
lemon juice 4 tbsp
lemon zest 2 tbsp
baking soda 2 tsp
vanilla extract 1 1/2 tsp
salt 1/2 tsp
Directions:
Combine the wet ingredients.
In a mixer, add the wet mixture and the dry ingredients. Mix until combined.
Form into palm sized balls and bake on an oiled baking sheet for 25 minutes at 350F.
Layla is fast becoming a culinary expert and if you ever get to visit Sourcefarm, you'll be in for a treat if she's in the kitchen!
