Breadfruit Flour-Quinoa-Pak Choy Fritters

This recipe from Marianna's Kitchen a great way to the incorporate more vegetables into your diet.



Ingredients:

  • Breadfruit flour 1/4 lb 

  • Chopped pak choy (A good amount)

  • A small onion, finely chopped

  • Baking powder 1 Tbsp 

  • Cooked quinoa 1 cup 

  • Salt to taste

  • Spices you would like to use (I used garlic, garam masala, fennel seeds, and nigella seeds.)

  • A scotch bonnet pepper (optional), finely chopped


Directions:

  1. In a bowl, add the pak choy and quinoa first and combine.

  2. Add all the rest of the ingredients. Mix everything and add water until you get a batter that's little thicker than a pancake batter.

  3. In a frying pan, warm up your oil to 350F, and add big spoonfuls of the batter.

  4. Remove the fritters when they are cooked through, nice and golden.


Enjoy on their own, or with a dipping sauce.
