Breadfruit Flour Quick Bread

Flat bread, roti wrap or pizza crust? You choose.


  • breadfruit flour 1/2 cup 

  • renta yam, raw puréed, 2 cups 

  • annatto seasoning sauce 2 tbsp 

  • 2 scallion chopped 

  • Sea salt to taste


  1. In a large bowl, combine ingredients and mix into a thick runny batter.

  2. Spoon and carefully spread 1/2 cup batter into a cast iron skillet.

  3. Cover skillet. Cook on medium high heat until dough surface and edges are dry. Flip, recover skillet and cook other side to desired doneness.

  4. Remove bread and cover with cloth to keep warm.

  5. Repeat process to finish batter.
    Makes 4-6 servings.
