Boiled Breadfruit Dumplings with Saltfish Run Down (Run Dung)

What's better than dumplings? Breadfruit dumplings!

Ingredients for dumplings: 

  • Breadfruit Flour

  • Water


  1. Combine and mix until a slightly sticky dough is formed.

  2. Form into large, flat "cartwheel" dumplings and add to a pot of boiling water

Run Dung Ingredients:

  • Milk of one dry coconut

  • Saltfish 1/4lb 

  • 5 Pimento seeds

  • 1 large Onions

  • 1 Tomato

  • Garlic 1 clove 

  • Thyme 1 sprig 

  • 1 Scotch Bonnet Pepper


  1. Add coconut milk to a sauce pan and boil until reduced to a custard.

  2. Add chopped tomatoes, minced garlic, diced onions, minced scotch bonnet pepper, pimento seeds, and a sprig of thyme to the custard of milk and stir.

  3. Allow to simmer for 2 minutes and then add the flaked saltfish.

  4. Continue to simmer on low for 3 minutes, stirring occasionally.

  5. Serve with dumplings.
