Vegan Breadfruit Carrot Cake with Cashew Frosting

An easy carrot cake without eggs or dairy

This is the perfect recipe if you're craving a sweet treat.
Cake Ingredients:
Grated Carrots 450g
Coconut Oil 170 ml
Flaxseed Eggs (2 teaspoons of ground flaxseed mixed with 6 tablespoons of water)
Breadfruit Flour 250g
Baking Powder 2 tsp
Baking Soda 1 tsp
Apple Cider Vinegar 1 tsp
Ground Almonds 200g
Agave Syrup 150g
Salt 1/2 tsp
Cinnamon 1/2 tsp
Frosting Ingredients:
Soaked Cashews 100g
Plant Based Milk 40ml
Coconut Oil 20ml
Zest of a Lime
Cake Directions:
Prepare the flaxseed eggs.
Combine all in a bowl with the flaxseed eggs and mix into a batter.
Pour batter into a cake tin and bake at 360F (180C) for 55 min.
Remove from oven and allow to cool completely. Remove the cake from the tin.
Frosting Directions:
Add all ingredients to a blender and blend to a creamy texture.
Cool completely in the fridge an spead on cooled cake.
