Callaloo Pie with Breadfruit Flour Crust

This savory pie is a treat.

Ingredients for Crust

  • Breadfruit Flour 2 cups 

  • Sea Salt 1 tsp 

  • Coconut Oil (or olive) ½ cup 

  • Water ¼ cup

Directions for Crust:

  1. Preheat oven 350F

  2. Mix to make a fairly dry dough.

  3. Press into a glass pie dish or pan using your fingertips.

  4. Make at least ¼ inch thick going up the sides.

  5. Blind Bake crust for 20 min. or until just browned.

Ingredients for the filling:

  • 3 Eggs, beaten

  • Heavy Cream (or use cream cheese) ¼ cup 

  • Pre-cooked Callaloo 2-3 cups (press out all liquid through a strainer)

  • Salt Fish 1 cup (soaked, flaked and de-boned (this is optional))

Season this mixture with: 

  • 1 small Onion chopped

  • Dash of ground Pimento

  • Grated Nutmeg

  • Salt to taste (less if using Salt Fish)

  • Grated Cheese or crumbled Feta Cheese 1 cup  (cheese is optional)

Directions for Filling:

  1. Mix all together and fill crust

  2. Decorate top with 1 cup grated cheese (also optional), sliced tomatoes, a sprinkle of salt and pepper, sprinkle of oregano or thyme

  3. Bake pie 30-40 min. until cheese is melted and callaloo is firm.

This recipe is unique and pairs callaloo and cheese, a surprisingly delicious combiation.
