This treat was sent in by a young chef from Sourcefarm Ecovillage. It was enjoyed by their 2024 Permaculture class.


  • breadfruit flour 1 1/2 cup

  • sugar 3/4 cup

  • coconut milk 3/4 cup

  • lemon juice 4 tbsp

  • lemon zest 2 tbsp

  • baking soda 2 tsp

  • vanilla extract 1 1/2 tsp

  • salt 1/2 tsp


  1. Combine the wet ingredients.

  2. In a mixer, add the wet mixture and the dry ingredients. Mix until combined.

  3. Form into palm sized balls and bake on an oiled baking sheet for 25 minutes at 350F.
