Gluten-Free Breadfruit Flour Yatties

Phillip Lowther from Asha Wellness is well-known in eastern Jamaica for his gluten-free patties. You can find him every Saturday at the Ujima Natural Farmer's Market.



Ingredients:

  • Breadfruit Flour

  • Sweet Potato Flour

  • Cassava Flour

  • Coconut Flour

  • Aluminum-Free Baking Soda

  • Nutritional Yeast

  • Sea Salt

  • Water


The crust of these gluten free Breadfruit Yatties Patties are made from equal parts sweet potato, cassava, coconut, and breadfruit flours.


Directions:

  1. In a bowl, combine the flours with a some nutritional yeast, a bit of baking soda, and a pinch of salt.

  2. Add water gradually and knead to form a dough.

  3. Using a large spoon or your hands, break off palm sized pieces of dough and roll into balls.

  4. Roll flat with a rolling pin. They should be about 1/8in thick.

  5. Add your cooked filling to one half of the circle, leave a little room along the edge.

  6. Dip a fingertip water and slightly moisten the edge of the circle then fold in half over the filling.

  7. Using a fork, gentle press the edge of the semicircle.

  8. Baked until slightly golden.
